Meet our Head Chef
Our award-winning Head Chef Allen Townsend brings over 35 years’ culinary experience to every service. Throughout his career, he has managed teams of up to 120 chefs in a selection of wild and wonderful venues – including the first ever Abu Dhabi Grand Prix.
Over the years, he has cooked for royalty, sat on the judges’ panel at industry competitions and earned many awards, including gold at the prestigious Salon at the Restaurant 2019.
Our food philosophy
Our passion for food runs deep. If we aren’t proud of a dish, we don’t serve it. If a garnish isn’t adding to the flavour profile, don’t bother.
We’re not in this to boost our egos, we just love great tasting food. For this reason, we take great care to source beautiful, sustainable ingredients and prepare them with precision and attention to detail.
